Y’know when you come in from work and you want something delicious and easy but you don’t want pasta? This dish solves all those problems and more.
This recipe uses two pre marinated salmon fillets in sweet chilli from Lidl, but you could likely find these in any supermarket (or even marinade yourself). Buying them pre marinated makes this a really quick easy tea.

Sweet Chilli Salmon with Vegetable Noodles
Serves 2
Ingredients
2 sweet chilli marinated salmon fillets
1 pack straight to wok noodles (or noodle of your choice)
1/2 head brocolli
1/2 red pepper
1 small carrot
3-4 spring onions
1 tbsp tomato puree
2 tbsp soy sauce
2 tbsp tomato ketchup
1 tsp white wine vinegar
1 tsp balsamic vinegar
2 tsp cornflour
Splash water
Sesame and sunflower oil for frying
Chilli flakes (optional)
The salmon I bought is microwavable in its pack for 3 minutes or so, but if you have normal salmon you’ll need to put it under the grill at the beginning.
Chop up the broccoli, carrot, pepper and spring onions into small pieces. Saute in the sesame and sunflower oil together until softened. In a bowl, stir the cornflour with a little bit of water, and add in the soy sauce, tomato ketchup, tomato puree, balsamic and white wine vinegars.
Add this mix to the pan with the vegetables and keep stirring while it thickens into a sauce around the vegetables. If it’s getting too thick add extra water accordingly. Add your noodles to the pan or prepare according to packet instructions. Stir together and serve your salmon on top of the noodles, or you could flake it in.
