Beans! Beans are great. They’re protein-y (so I’m told) and really cheap. And they keep in your cupboard for ages if you buy them tinned and forget about them like I did.
Until today. Hello, mixed bean salad tin. You are going to be something wonderful.
Don’t be misled here – this is an easy Greek bean salad in the sense that it is a Greek salad with beans in. Recipe after the jump!
Easy Greek Bean Salad
1 bell pepper – any colour
1/4 red onion
10 or so cherry tomatoes
1/2 packet of feta cheese
2-3 sundried tomatoes
2 inch piece of cucumber
Tin of mixed beans or any ready prepared beans in water
Finely chop your pepper, onion, tomatoes, sundried tomatoes and cucumber into really small (like 0.5cm) cubes. Chop up your feta into smaller cubes or even just crumble it by hacking at it with a knife.
Prepare your beans according to instructions. Mine needed a few minutes on the hob and a quick rinse to remove their tin mulch they had been sitting in.
Mix into the vegetables and eat!
